Favourite Recipes – Banana and Macadamia Muffins

Another healthy snack for families, great with a morning or afternoon tea or coffee.

100mL macadamia oil, or light olive oil
Quarter cup of sugar (I use raw sugar)
One egg
Two tablespoons yoghurt (I use Greek vanilla yoghurt)
Two tablespoons grated carrot (optional, adds a tasty variation)
Half cup chopped or ground macadamia nuts (IMPORTANT! AVOID GIVING WHOLE NUTS TO CHILDREN UNDER 5 YEARS)
Three ripe bananas, mashed

Mix together with fork, then:
One and three-quarters cups self raising flour
Quarter teaspoon bi-carb soda (baking soda)
One teaspoon mixed spice
Fold wet and dry ingredients together with fork – care not to over-mix

Place mix in a muffin pan – makes 12
Bake in a fan forced oven, 190 degrees Celsius for 20 to 25 minutes
